The Max 8 can do it, but it's tighter than you think.
It's not just about distance from point of departure to point of arrival that you need to cover. You need to cover the distance from your point of arrival to an alternate airport as well. If the weather over Iceland is crappy, and you can't land at KEF for whatever reason, and the only other 2 usable airports in Iceland for a 737 (EGS and AEY) don't meet the alternate airport weather requirements, then your diversion airport is pretty far. You could end up in Scotland or having to backtrack all the way back to YFB or even Newfoundland. If that's the case, the flights would be weight restricted, even on the Max 8.
You don't have that problem at PUJ or LIB.
#1 The weather is seldom that crappy in the Caribbean or Central America. (Some of these airports don't even have ILS approaches. They don't need it.)
#2 several other usable airports are nearby.
YVR-KEF is only 300nm further than YYC-KEF, and FI uses the B752 on the route. There is a reason.
