The average young professional Canadian in cities can barely afford studio or 1 bedroom apartments, barring the Bank of Mom and Dad. I think it would be nice to strive for a society the middle class can afford 3000 sqft.

I somewhat agree, but we're just not there right now. I don't think there's an overton window—rooming houses, SROs, illegal basement suites, and roommates have always existed—but because supply is so constrained those housing options have had more focus. The biggest crime in this country is that housing that the market demands continues to be illegal. There exists a world where we return to having substantial amounts of large family sized units, but instead of making it legal to build a 20 unit building, we just complain that 20 people are living in a house.
In the meantime, we're clearly still somehow absorbing immigration into housing in this country, but housing policy absolutely has to have sweeping changes if that's to continue.
Legalize housing!
