Good questions.
The underground stations are built to full length for future expansion, but I believe they are walled off. Perhaps parts of those sections at the extremities of the in use platforms.
From my understanding during my visit, the maximum track speed limit is 85km/h. The trains are designed to go up to 105km/h however, and have been operated at that speed on the 'test track'.
Some sections like the stretch between uOttawa and Lees, the LRV reaches around 82km/h on average. This will be also what can be expected on the longer stretches elsewhere, so the trains should reach the max track speed in many places.
In the tunnel it passes at a fairly high speed as well, around 60km/h ish, but in the curves it seemed to take them quite a bit slower then accelerate to the higher speed on the straights.
In the video, other than when I was doing Manual Control, in ATC it was operating at regular service speeds.
Same for the stretch between Lees and Hurdman, it was operating between 30-40km/h. The instructor said that was because of it passing over water and the curve.
And on a side note, the 12 day testing is not currently in progress.
I was out all of this morning and I don't think I saw any single trains operating, they were all doubles. There was a double unit stopped for a while at Tremblay, and so the trains were alternating on the other platform. Service was being maintained and a train was arriving every 2.5 minutes in one direction and 2.5 minutes in the other (so 5 minutes each direction). As well, at Tunney's, there was also a train parked at one platform, so arriving trains were stopping on the other platform. In both cases, the stopped train departed after some time. Potentially they were testing scenarios, or could have been a glitch.
