Good question. I usually hit various tracks a few times a year on my way to somewhere else. I'm pretty sure most tracks are harness only. While a place like Woodbine or Fort Erie (the two tracks that host the Triple Crown) would be thoroughbred and then standardbred (harness) in the winter.
IIRC, there are about a dozen tracks in Ontario. Used to be 15 or so. More will be closing in the coming years. This is the trend across the industry in North America.
When I looked at wikipedia it shows one or two harness tracks for each province.
