2-class 77W is likely more CASM disadvantaged vs a 789 on this route than the 50-60 seat delta would indicate, not to mention they're on their way to being reconfigured for ~400 seats when this launches. Too much airplane.

Not really. They only started getting them this year and it's not surprising that they didn't come blazing out of the gate with YYZ-DXB. Given that it will be 2x 789 and 1x 789, it suggests they prefer the economics of that frame for the route and thus they are waiting.
I'm not sure what evidence you have that suggests DXB is some untapped gold mine of revenue for AC with an airplane other than the 789.

AA is doing some juggling to get planes painted, among other things. We should at least hold onto the 319 until the 738 comes back but we might be dipping below 14x weekly for several days in the period you mention.
2x 319 is the lowest seat total to DFW we've seen in a little while.
