Summer months when school's out? Winter months when walking is difficult? It's not a constant and assured clientele, at least from what I can tell you about being a high school student in the Uptown. (We certainly couldn't help places like Reggie's from being run into the ground, that's for sure)
I'm not trying to battle you in regards to the business legitimacy of restaurants in the Valley, i'm simply stating that basing your revenue on high school students would be a perilous, and unreliable, cliff to sit on.

That probably has to do with the municipalities having outdated infrastructure. That is to say, the Valley hasn't built up their roads enough to handle the influx of traffic (residents). In regards to restaurants, people in cars does not necessarily relate to people in restaurants. It's typically Work->Home.
I'm sure stores like Sobey's and Shoppers do very well.

I'm sure the University Ave. location does just as well as the other Wendy's locations throughout Saint John.
