There are lots of things humans should not consume. That does not mean you ban them all. As it is, they still get used by lawn care companies, as long as they post those little signs on the lawn. Whew, what a relief.
When you are trying to have a nice lawn and it is 90% unwanted weeds, that is why. No different than repainting over or removing graffiti vandalism on your house. Also why the weed-free lawns in the Public Gardens get treated with similar chemicals, although that seems a closely guarded secret by HRM the Good.

If you let the chemical that remains on the grass touch your skin, it is absorbed by your skin and goes into your blood stream. Presumably you know this. If not, do some research, it might enlighten you.
Fertilize your lawn and mow it regularly. You will be surprised on how great your lawn looks without applying pesticides and hebicides. Read and learn.
