It's always full even during COVID reopening, there's typically a several hour wait to get in despite it being open for a few years now

I think you are conveniently forgetting a number of chains: Milestones, Boston Pizza, Chili's, Olive Garden, iHOP...
BC also has a few fast food chains that don't have a strong presence in the rest of Canada such as Chipotle and Krispy Kreme.
Personally, some chains aren't as exciting when you consider the local options. Red Lobster might satisfy your seafood craving if you live in the prairies, but there are so many great local options that will do it better, cheaper, and fresher in BC.

BC used to have a decent presence of big American chains such as Tony Roma’s, Hooters, Applebee’s, TGI Friday’s, Macaroni Grill, Rainforest Cafe… but as of the last two decades have all disappeared despite thriving in Alberta and Ontario

Honestly most of these aren't thriving in Ontario - besides a Hooters in DT Toronto I can't recall seeing basically any of them on a regular basis, def not Rainforest Cafe though I am not longing for that . . .
