I have 3 Nikons (D800, D700 and D7100) with 7 lenses, a Fujifilm GFX50SII medium format with a wideangle zoom, a Fujifilm XE3 with a few lenses and an Osmo Pocket. I also use my iPhone for candids with friends or to grab a subject for later use.
Ultimately, it's all about what you want to do and your budget.
As a beginner, I would recommend buying second hand and to keep your budget at under 1K. You will want flexibility out of your equipment. Buy a body with a low shutter count and a clean (little dust if any and void of mold) lens or lenses that you'll get the most use of. In my opinion, most serious amateur photographers get a lot of mileage out of a wide angle zoom lens as well as normal or short telephoto lens (40mm-60mm). One awesome crop sensor lens that served me well is the Nikkor 35MM... It's cheap, and delivers near professional quality optics (but is slow at focusing and feels very plastiky). You could get a lens that covers that entire range - like a 24-70 - but a quality one will be very expensive. Long telephotos (150mm +) are too limited in usage, too expensive for the use you'll get out of it at the beginning, and heavy/uncomfortable to carry around. Also, glass is generally more important than the camera itself.
You could get the D7100, Tamron 10-20 or 10-24 with a Nikon 60mmD for about $900. Other brands (primarily Fuji, Sony and Canon) offer similar buying opportunities.
Equipment is secondary to your skills, mainly your lighting and composition skills, and your ability to edit images in software like Photoshop.
Some great low-hanging fruits to get in photography are landscapes (fall is coming and this makes for colourful images or very dramatic black and white shots on foggy days) and candid/environmental portraiture (friends and family).
