I think these days you'll just spray everything charcoal and then hang a field of strip lights and cloud ceiling panels under them. Interestingly, they used intumescent paint on the main exposed steel elements but not the smaller beams.
But, and I am not kidding, it is harder for mice to run around on. It's much easier for them to gallop around on old-school t-bar panels.
And no, I'm not joking. They're a fixture in many downtown buildings, and some pretty high up there too.

Nearly every building has had a pest issue at one time or another. It takes constant work by the Landlord and good practices by the Tenant to keep em out.
