It relates to it's historical significance and usually the grandeur/size of the building at the time it was built as well. For sports, think Maple Leaf Gardens, Fenway Park, Wrigley Field as examples.

AT&T Stadium in Dallas is mammoth - but it's not "the cathedral of the NFL".

you're too literal. It's become kind of a figure of speech. The bell centre is known as the "cathedral of hockey"

Well, it's only going to become a cathedral a year from now. Its life until now has been just a blinged-out church, and it was never built with the intention of being an actual cathedral (or crystal, for that matter).

^I love all the dirt. I'm okay with that plus improvements to the roof and general aesthetic upgrades to the stadium. Grass would be nice but I have the feeling it would be a money pit...

I have to agree with Berklon here, the title 'Cathedral' is very much earned and the venue needs to be steeped in history.

Rubbish. It may be marketed as a cathedral but it has not yet earned the title of a 'Cathedral of Hockey'. It's a great barn and one that is on my list to visit but it is early days. Let's not let marketing and boosterism make yet another term meaningless.
