For Calgary, from what I could gather, they have 107.5 million annual boardings which puts them at ~350k daily riders. Very impressive.

Yeah I get that there are twice as many transit riders in Denver that is why I was surprised with the rail ridership. Other reasons include; Denver opened light rail service before SLC did, Colorado is far less conservative than Utah(Srsly the number of people out here that don't "believe" in global warming is ridonkulous), Denver doesn't have the awkward geopolitical boundaries that SLC has, and the last time I was in Denver(about a decade ago) the rail looked to be coming along nicely.
As far as "SLC punching above her weight" I wouldn't put it that way. I would say that rail is underdeveloped in SLC to a lesser extent than many other US cities. I am still surprised to hear that Denver isn't forging ahead with rail at a faster pace than SLC.
