I think it's more about a bad concept than anything. Bad Mother Cluckers served mediocre chicken and had extremely cheap beer, probably making it difficult to turn a profit.
Julian Wright is basically the Sam Fox of Mill, he pairs modern concepts with really good food. Wright's restaurants haven't gone under (La Bocca, Handlebar, Gringo Star, Canteen/El Hefe). The old bars Rula Bula, Cue Club, Fat Tuesday, Tavern, Zuma etc. have all been there for a decade.
Mill has been lacking a good true sports bar for years. Majerle should have put a bar on Mill years ago - Zipps is going to do extremely well.
