They wouldn’t have spent the money demolishing this building if their plans to rebuild a new one went on pause, would they? It seems odd how there has been no indication as to what the replacement build is going to look like by now.

Just a note that the Simons hoarding wraps around the old Nordstrom facing the Georgia plaza have been pared back so they do not front the space to be occupied by unknown Tenant #4 (at the old Nordstrom front doors).
Now the Simons wraps only cover the new plaza entrance area as well as the new entrance behind the bus shelters on Granville.
Someone (i.e. new Tenant #4) must have gotten worked up by the error.

Cadillac Fairview had its annual ice cream day today and they combined it with a World Cup watch party on the roof of 777 Dunsmuir. It's usually on the Georgia plaza in front of 725 Granville, but that's hoarded up and too busy with the street closure.

Left door is for the other unit. Simons' door is the right one.

There should be a diagonal arrow pointing to the lower right from the big Simons sign.
People will walk into the other store (which will also have its own sign) thinking it is Simons.

So there will be Aritzia and Simons, that leaves two additional large spaces, correct? What about the lower level, how many spaces are down there?

Once the Four Seasons tower is finished being dismantled, with there be a temporary use of the podium, or will it be a derelict dead zone for a while?

Yeah, 2 units remain unannounced. Both from street level upwards (2 or 3 levels).
Mall level was previously converted to smaller stores before Nordstrom.
Nordstrom never had a presence in the mall other than elevators in a side corridor.
Not sure if Simons would retain those elevators.

any guesses or theories as to what kind of tenants will go in those?
