The glass actually IS curved. The glass itself wasn't actually manufactured with a curve in it, but through a process called cold warping, the glass is flexible enough to be molded into a warped shape. Glass at the top of the building is as much as 4 inches out of plane.
Also, the curvature of the sail means that nearly every piece of glass on the west elevation is unique. While glass may only differ by a millimeter or two from one panel to the next, it was necessary in order to get the glass to fit within the frame of the curtainwall. Because of this, "attic stock" glass was not feasible for the west elevation.
