From what I gather, Angel Avalos (the son of Mex-I-Can’s founders) opened the Hess Village location — initially referred to as the Mex-I-Can Food Cartel, now rebranded as Agave — and was said to have been in negotiations to open two additional locations just
three months ago.
Closer to downtown, Veronica Sanchez (Mex-I-Can’s head chef) is apparently opening Mesa Authentic Mexican Cuisine at 255 James North.
So in theory there's potential for four Mex-I-Can spin-offs.
That's about $26 per restaurant.
The former Mex-I-Can building at 107 James was of course found to be
structurally unsafe and from what I could see over the last couple of weeks, it seemed to come down like it was made of tortillas.
