Yonge will be the leader though (IMO) with an unobstructed view from the Gardiner north.

Speaking of emerging canyons, I've been noticing that Bleury street is developing its own little canyon, This should be compounded as more towers keep sprouting on this small, non-descript street.

Totally agree. By far the drive along the Gardiner through the downtown core is the best in Toronto.
