It's a while since we have been able to try out any new restaurants, but the opportunity presented itself last month to go check out one of the new Michelin Star restaurants. Surprisingly many of them are located in Downtown Eastside, so we chose Published on Main based on its location in the Little Mountain neighborhood and also the food which has been renown even before they got their star.
The interior is a contemporary version of a traditional English tea house.
Their Michelin Star plaque is proudly on display.
Their 10-course tasting menu starts at $165 per person, but we ended spending $470 in total for two. The unusual thing was that the entire bill was due already upon booking and not just a small deposit, as is more traditional.
Chef's selection of snacks was a great start to the experience and we enjoyed them greatly.
Markklössensuppe beef shank, bone marrow, dumplings
Side stripe shrimp, cucumber, horseradish oil is their famous dish.
Hiramasa seabuckthorn
Sablefish, yuzu, pines
Ravioli with delicata squash, koji butter sauce was an excellent main course and also other main courses did not disappoint.
Bison, brown butter, celeriac
Brunost tart was an interesting experience.
Grape basil gelato was refreshing.
Douglas fir malt crumb
The entire experience took as almost 3 hours and as we were leaving, the restaurant was full of people and rather loud, which does take away from the atmosphere.
Overall, it was a pleasant and worthy experience and does match our previous experience of several 1 Michelin Star restaurants in several countries. For them to exceed that and get a second star, the food needs some work to be more inventive and to get the ultimate 3 stars, the service, which wasn't bad, needs to be a lot more personalized. In current state, the experience is worthy of 1 Michelin Star in our humble opinion.
