The original plan was to leave as much of that stone exposed as possible, but for various reasons (required fire code separations between buildings, etc) that’s not possible everywhere.
On the third floor, that west side of the building has fitness, bathrooms, etc, so I don’t think there’s any windows on that side. So, either a frame or CMU wall on the Canopy floor, not on top of the existing Esquire wall, with some flashing or waterproofing at the joint where the top of the Esquire parapet meets the adjacent Hotel wall.
