Perennial will focus on American- and Belgian-influenced craft beers, and Wymore says he plans to use local, seasonal and organic ingredients such as fruits and herbs in ways that may "defy traditional categories."
Before moving to St. Louis this year, Wymore spent the past four years in Chicago, where he studied brewing at the Siebel Institute, oversaw the barrel-aging program at Goose Island Brewery, then worked as head brewer at Half Acre Beer Co.
Perennial will be located in the Temtor Building, named for the fruit-preserves company that occupied the structure before Coke. The historic site is undergoing a $27 million, mixed-use redevelopment project that will include about 75 loft apartments.
