On a side note: I don't see any problem with saturation in any of your pics. A couple things I would suggest is when doing the HDR, after getting your main subject properly exposed, you could go back into photoshop and go over the blown out highlights and make them bright again rather than the flat, sort of nuetral, gray it tends to become.
