The rest of the states are all part of the South, but I know that would be huge, so you could organize them like the Census Bureau and group Texas, Oklahoma, Arkansas, and Louisiana into a "West South Central" category or maybe just "West South" or "Western South" or something? The rest (Kentucky, Virginia, West Virginia) could be part of the "Southeast" or "East South" or "Eastern South." (Kentucky is definitely not Midwestern.)
