Bt based of my travels to all of the other big cities, I find that indeed, there is a serious lack of non-big-box-store bakeries in Canadian cities.
In the suburban sprawl of Gatineau, there are at least three independent neighbourhood bakeries within a 3-km radius of my house. All of them are owned by immigrants from France BTW.
