AC already flies YHZ-LHR on 737 max. And before the max it was flown on a widebody Boeing 767 for decades. The A321XLR is not really an upgrade from the 767 but more comparable and comfortable than the 737 max that they are using now.
They had YHZ-FRA in their plans before the pandemic. Frankfurt is a major hub for Air Canada's partner Lufthansa. Using an A321XLR on this route makes sense.
Eurowings Discover (Lufthansa) is using an Airbus A330 widebody YHZ-FRA this summer.
Condor is using a Boeing 767-300 widebody YHZ-FRA this summer.
