Barbacoa and Big Red I'll do. I also eat breaded deep fried chicken livers now and again.
I'll skip the Genitalia Festival for now however, thank you very much. They must be at the very tail end of ideas for festivals I guess. These organs are also ground and poured into potted meat cans for sale in grocery stores.

Treat yourself to a ball of a time at the Texas Testicle Festival in Fredericksburg next month.

The event, which will take place on March 5 at the Bankersmith Hall near Fredericksburg, will serve up pound after pound of the delicacy known as the Rocky Mountain oyster. According to the festival's event page on Facebook, the bull testicles will be celebrated and “fried in tenderly love” for consumption.

Eating testicles from calves, lambs, roosters, turkeys and other animals is a tradition on ranches throughout Central Texas and the Western United States. The festival will also serve up sweetbreads made from an animal’s pancreas or thymus gland.
