In the image that SLC Projects posted a few pages back with two towers on on 67 I don't see that as an unrealistic proposal. This image shows a tower on the NW Corner of 200 S and 200 W and a second tower on the SE corner of 100 S and 300 W, with the connection to the Salt Palace over 200 W. That entire proposal takes up only two parcels, two parcels that happened to be owned by the same company. Who's to say the owners wouldn't sell them both at the same time. Depending on how much large hall Expo space is needed, I could easily see them using both parcels for convention center and hotel space.

I actually think that they could accomplish this while still providing a mid-block N/S access, maybe a street, maybe just pedestrian. I could see them placing the large expo halls on the portion that is currently occupied by RWP and the Post Office, with a connector over the mid-block access connecting to the other portion of the hotel and meeting spaces on the NW corner of the block.
