We only waited 15 mins both times, but be warned that both nights they wouldn't allow any more people in after approx. 7:30 because they were filled to capacity for the concerts.
The feedback I've been hearing is that most of the "pavillions" could charitably be described as lame. Basically places to peddle trinkets or beer. The Italians apparently feel Vancouverites have never seen Italian furniture before, and will be suitably awed by it.
