Why would professions like doctors and pharmacists want to be unionized? It sort of loops back to unions not always being about wages. Often it is things like working conditions and internal promotions. For example, all large hospitals have in house pharmacists. Staffed hours included evenings, weekends and every stat holiday. How the schedule is set would be something a union contract would directly address.
Doctors I know that are unionized are better known as "medical examiners". How "on call" status works, and how it is rotated between staff would be a concern. They would also likely be looking for something on if the employer supplies a vehicle for their use while on duty or alternatively how mileage is being paid.
Without a union contract in place those things are either open to negotiation each time they come up or a left to the whim of some manager.
