The web page for Essex 500 Folsom has a photo that claims to be of the view from the 9th floor lounge of the completed building, which is an impossible view as the view is a photo taken from the Essex Fox Plaza which is over a mile away! A good place to have an Impossible Burger? Quantum physics at work here? See the link here:

Summer 2019 seems like a doable date for them to complete the project

I was just going to say the opposite—I'm not entirely sure that they'll be able to make Summer 2019 at the pace they're going.

I don't recall the exact start date of construction, but the crane went up about a year and a half ago and they're only roughly at the halfway point with the floor count currently. Considering the time it takes to fill in the guts and complete finishes, they'll be cutting it super close even if they're aiming for August 2019.

Many of these places will open with only a couple finished units, closed amenity areas and unfinished lobbies. They are an operating building at that point, even if they are only at a few percent occupancy.

waterchicken - I am certain that I will retain the view for now. What is coming in the future
is uncertain. I used to see all 4 of the San Francisco Bay Bridge towers. The Jean Gang designed building at 100 Folsom will be the one to block the view of one of the towers. As soon as the full profile of 500 Folsom is in view I will post a picture.
