Looks like they've got about ten feet of digging left. This is going to be quite the pit when it's done. Not quite as large as Indeed Tower's pit was, and without a historic structure in the corner, but still very big.

Is there a resource that explains how the depth of these pits is determined/calculated? I figure the height of the building is an obvious factor, but I'd love to read an article or something that describes the process a bit more.

There are 6 floors of underground parking in addition to the 10 level above ground podium. That's what drives most of the depth I assume.

The only time they really need to dig is when they're putting in underground parking. Otherwise, the foundations can be put in place simply by drilling and pouring concrete/placing rebar caissons.

Ah, for some reason I assumed that digging deep would make the building more stable (similar to how you would dig holes for fence posts - the higher the post, the deeper its hole).

That's typically how it is over here in the Bay Area, but also for underground parking. I guess because it's earthquake territory here. I'm used to it over here and I find it strange Austin builds a parking podium lol

You are correct but also it can make the foundation cheaper and easier to install if you excavate to the top of the rock. The big draw though is to bury the parking required by the code

You're completely right -- this is a great opportunity for some amazing (iconic?) lighting. Hoping that evening rendering above isn't the final plan.
