Vegan potluck hosted in Namma Kudla

Jackfruit, in fact superfood, is emerging as main ingradient for vegan food as raw jackfruit chunks can be substituted for meat in various western meat-based recipes. I am going to list other local vegan substitutes in 'berake attilu' (बॆरकॆ अट्टिल्). I may make 'berake attilu' 100% vegan compliant later (though currently dairy ingradients like ghee is used which can be easily substituted with vegan ghee like coconut ghee). Also going to discuss 'make in kudla' potentials of various local plant products for vegan export markets. Vegan food is gaining popularity in western & other developed countries due to environmental 2 3, ethical and health 1 2 3 4 5 6 7 reasons. Demand for coconut (powder/ flour 2/ milk/ cream/ butter/ ghee/ honey/syrup 2 3 4/ jelly/ pudding/ cereal 2 3 4/ snacks/cookies/crisps/ sweets/confections/ drinks/beverages/ yogurt 2), jackfruit (peeling 2, cutting, cooking & canning/packing, jackfruit in water jackfruit in brine 2 3 4 5 6 7 8 9 10 11 12 13 14, packed jackfruit 1 2 - 'pottu gujje'/पॊट्ट् गुज्जॆ seems to be more suitable for all meat-substitute recipes, drying/dehydration 1 2 - dehydrated rags/cores/rinds can also be used in meat-substitute recipes after soaking, The Jackfruit Company 2 3 4 5 6, cereal, nutspread), seaweed (agar-agar instead of gelatin 2, mannitol, jam, crisps, salad etc 1) food products is growing mainly due to vegans, paleo/keto dieters 1 2. My request to vegan food festival organizers is to identify such market potentials also & provide exhibition place for substitute vegan products with domestic or export potentials. It is important to know about various diets like vegan, paleo, keto (& mark it so on product manufactured) & their market potentials (better to train foodproceesing/nutrition/dietitian students on them including ayurvedic diet, siridhanya diet etc; is there ayurvedic food processing & ayurvedic complaint ready made foods as per dosha? many ayurvedic doctors forget to list all diet items hence we need apps for ayurvedic, siridhanya etc; anyway patanjali noodles are quite popular; and processed food are strictly against siridhanya diet except may be stuffs like pappada/sandige; yes, there are foodie, nutrition & diet apps telling you which food is suitable before ordering or cooking as per recipe & tracking nutrition value of what you ate so far & what is missing and of course there are wearables 2 to track your diet though their usefulness is unknown). Domestic & export potentials have to be explored not only for food products but also plant-based other organic products (सावयव उत्पन्न).

Has any Tuluva tried 'Gujje Kori Sukka' or 'Gujje Kori Gasi' or 'Gujje Kori Saaru'? If not visit 'berake attilu' after year 2022 for the recipe. (hint: fry raw jackfruit pieces in oil or vegan ghee before adding to gravy; or if you don't like fried items then bake in oven after applying a small coat of coconut oil). I will write stuffs focusing on 'pottu gujje' and 'tuluva pelakai'. By that time I hopefully be promoting colocasia/taro 1 2 3 4 5 6 (kundapura maddi, colocasia esculenta) & giant taro (recchevu/marsan/mundi kande, alocasia macrorrhiza) tubers as superfood there! Alas, we don't even use taro tubers for sandige-pappada! Still I have hopes for 'thevu mela'/तेवुमेल before 2022!

So far Karnataka government has totally failed to encourage neera (coconut nectar) based honey/syrup/sugar/jaggery supporting units however a fresh hope is created recently - Rs 1 crore assistance for Neera Drinks Unit. Definitely neera has a great export market! Many of health conscious people are moving away from cane-sugar to alternatives like palm-sugar. How about producing 'neera jelly chocolate' by freezing neera with agar-agar from seaweed grown in Kundapur sea and applying a coat of palm-sugar or 'neera jam' 1 by mixing neera with coconut milk/cream or jackfruit seed/fruit pulp? As such coconut, jackfruit, jamoon (syzygium cumini), kuntala (syzygium caryophyllatum), kokum, star apple etc can be used for jelly mixtures, jelly chocolates/candies, other fruit preserves, stuffed cookies (stuffed with jams, jellies, creams etc; jackfruit pieces can even be used like tutti frutti in cookies). Various alternative flours like jackfruit flour, jackfruit seed flour, coconut flour 1 2 3 4 5 6 7 (veganization by flaxseed/chia+kalanamak+chickpea/mung for egg), breadfruit flour, eendu (caryota urens, added in a very small amount for its medicinal value) flour, kundapura maddi tuber flour can be used for cookies/crisps, chapathis/tortillas, breads/nuns/rotis, cakes/pancakes, pizza bases, pasta, noodles etc (can think of healthy edible gums for binding). We can think of mixing herbal leaves juices/pastes like kuntala leaves juice for preparation of herbal jellies & other food products with medicinal values as per ayurvedic/allopathic recommended guidelines on daily dosage.

We should also find a way to exploit molasses & oilcakes for 'Nutritional Yeast' 2 3 once Brahmavar Sugar Factory is revived. So many edible oil manufacturing companies in Mangaluru produce oilcakes including coconut oilcakes as byproduct.

We can cultivate other popular vegan vegetables like 'heart of palm' 2 3 4 5 6 7 8 9 10 11 12 13 14 (<- vagan cheese/mayonnaise/cream). This has nothing to do with the palm culitivation project for edible oil production - Oil palm growers likely to get nursery, Farmers urged to grow oil palm in clusters. But heart of palm processing waste can be used for producing palm flour - Study shows king palm flour is high in dietary fibres and minerals (once upon a time we were used to use 'caryota urens' eendu/ईंद् leaves for decoration instead of plastic stuffs). Palm cultivation can be under agroforestry - 1 2.

I have already talked about exploring possibilities of lotus cultivation for foxnut/makhana 2 3 and other lotus based vegetables along with pashchima vahini supported backwaters.

Who knows one day Tulunadu may have foxnut, heart of palm, seaweed, mushroom 2, jackfruit, coconut, colocasia/taro processing units just like cashewnut processing units (including bakeries; whether there is any integrated cashewnut processing unit in Tulunadu producing bakery products starting from raw cashewnuts?) as vegan/keto/paleo food habits are steadily growing throught the developed world. I have neither tasted chashewnut chocolate 2 nor foxnut chocolate so far (infact I have stopped eating chocolates a long back). But before that I wish to taste 'puffed jack seed chocolate' (not chocolate coated fried jackfruit/seed sticks) at least once in lifetime. At the rate at which people are coating food items with chocolates I think we may soon have chocolate coated banana chips, coconut chips/flakes and even kurlari/poddolu (puffed rice) etc.

I think there is scope to make 'jackfruit peeling machine' popular like this - Coconut dehusking machine becoming popular in Mangaluru.

Emami Agrotech's Rs 250 crores 43 acres edible-oil refinery (palm & sunflower) is coming up at MSEZ. No further news on proposed Orient Source HK Limited (Commodity Trading & Logistics) 121 acres project. Probably Campco also be putting up Coconut Factory in MSEZ land only. Looks like MSEZ is becoming a 'Food Processing Park' or a 'Special Agriculture Zone'. Don't be surprised if DK MP takes credit for establishing 'Special Agriculture Zone' as per his manifesto during next general election campaign!

In & around Baikampady we have now edible oil refiners like Ruchi Soya, Adani Wilmar, Anagha (Sun Premium), Rajashree packagers and Emami. And few others like MK Agrotech have storage facilities. There is lot of potential in Tulunadu for other type of food processing industries also. I am waiting for the day we will have 'Udupi Shrikrishna brand' just like Patanjali brand!

Given the size of Karnataka, it is important that a commercial court with jurisdiction for DK and surroundings districts is established in Mangaluru not Bangalore. KCCI has already taken up the issue with Department of Law and will focus all our energies toward this. This would ensure a more equitable access to justice, while strengthening the ease of doing business, he added.

“KCCI will also work with the district administration to set up adequate leisure infrastructure in the city to support the growing needs of Human Resources in the IT field. KCCI is working on setting up a Native Start-up cell to motivate, hand hold and fund entrepreneurs from our District to solve problems facing our district and build them into gainful businesses and industries. A dedicated team is already formed to spearhead this initiative.

A maritime board can effectively promote port based industries & address issues faced by them only if it is located in a coastal city. But don't be surprised if the cunning politicans set up a namesake maritime board in the parched city itself to please unsmart voters here and render it ineffective.

Told them to get requisite training first. But they want jobs without educational qualification. Who cares, give up your land for these companies' expansions, learn only IT/BT and go to 'thirsting monstrous city' for jobs & rot there! Where is Tulu Development Authority?

This company for name sake has put Mangalore in front of its name but its sincerity is with the parched city hence built headoffice there.

And these waste bodies were fighting against merger of a traitor bank which did not even think its birth place Mangaluru was worth of its memorial - Vijaya Bank Museum inaugurated. Good, traitors should not have memorials here. Am I the only person enjoying the demise of this traitor?
