Pearl Brewery will gain a new Italian restaurant early next year. Chef Andrew Weissman, the owner of the upscale Le Reve restaurant, is unveiling a new concept called Il Songo at the former brewing facility.

The owner of the Pearl Brewery project, Silver Ventures, is in the process of transforming the complex into an urban culinary and cultural destination.

The restaurant will be developed in the Full Goods Building at the 22-acre site. The Full Goods Building is a former warehouse that will feature office, retail and residential space.

“Andrew has a passion for the freshest, most wholesome food, prepared and served by the most professional and knowledgeable staff, in a setting that encourages conversation and engagement,” says Ken Halliday, chief operating officer of Silver Ventures, the owner of Pearl Brewery. “The plan he has created for both food and the social atmosphere at Il Songo really brings to life important elements of the vision we have for the Pearl Brewery.”

In addition to owning Le Reve, Weissman is also a partner in the Sandbar Fish House & Market, Sip Coffee & Espresso Bar and Big’z Burger Joint. He says his vision for Il Songo, which is Italian for “The Dream,” is to offer five-star caliber cuisine and service in a casual setting. Weissman’s French restaurant Le Reve also means “The Dream.”

“We’ve worked very hard to find the best foods and techniques from Italy,” Weissman says. “We want our guests to feel transported, both by the menu and by the type of relaxed dining experience you’d find in a European cafe society.”

Il Songo will serve freshly rolled and cut pasta, an assortment of cheeses and desserts at the 3,000-square-foot restaurant. Il Songo will have a downstairs patio and a second-story open-air deck for private dining. In the future, Il Songo may offer Italian-style breakfast items on its menu.
